Now that summer is here, I’ve had a hard time finding the energy to bake artisan bread. The kitchen gets so hot that the idea of mixing, folding, and shaping sounds like too much work. Even worse, the heat makes it easy for me to over proof my dough, resulting in flat, unappealing loaves.
However, I did manage to produce one pretty loaf this week, and I’m really glad I did.
This same-day artisan-style white bread recipe is one of the first recipes I tried when I was just learning how to bake artisan bread. I honestly didn’t know what I was doing the first time around, and now that I’ve had a few years of practice, I thought I’d go back and try it all over again.
Although I struggled multiple times with over proofing the recipe, each loaf had a beautiful even crumb that made it perfect for sandwiches. My family definitely enjoyed eating it. And since the recipe didn’t take days and days only to result in epic failure, I enjoyed making it a lot more than other recipes. If I failed, I simply tried again the next day – and each attempt was tasty despite my poor shaping skills.
