Costco is a great place for buying big bags of carrots and nuts. But my family sometimes struggles to eat what we buy before it expires.
In a desperate attempt to eat as many nuts and carrots as we could endure, I made some carrot pecan bread. And wow, I’m so glad I did.
It’s pretty much a tasty carrot cake, but in bread form – and that makes it wonderful. Even better, it tastes phenomenal with cream cheese frosting.
