It’s a known fact that I eat way too many carbs and fats. I make too much bread, and I bake too many desserts. My sweet tooth has no bounds.
I do my best to live a healthy life, however. I try to exercise regularly, and I keep tabs on my calorie intake with MyFitnessPal and Fitbit. My slow cooker recipes help me plan balanced dinners, and my rice cooker recipes help me with my lunches.
But sometimes I get an intense craving for chocolate. And sometimes, I let myself give into that craving – as a treat. This week, I devised a sneaky way to enjoy my chocolate and increase my protein intake at the same time: a single-serve brownie with PBFit Powder.
Peanut butter and chocolate go hand in hand, and some of my favorite recipes involve the two ingredients. My Peanut Butter Chocolate Chip Bread for example, have the perfect blend salty, nutty, and sweet flavors.
Unfortunately, peanuts tend to have a lot of calories and fat. Yes, some of those fats and calories are important, but I shouldn’t eat as much of them as I do in one sitting.
PBFit Powder has more protein, less fat, and fewer calories than a lot of my favorite peanut butter brands. It can be reconstituted to behave just like peanut butter, or it mixes in wonderfully with smoothies, oatmeal, and even pancakes.
By choosing PBFit Powder instead of flour for this single-serve brownie recipe, I get to enjoy more protein per serving without sacrificing flavor.
I know that this single-serve brownie with PBFit Powder still has a lot of sugar, so it’s not the healthiest snack option out there. But I do enjoy making it now and then, and I like that it satisfies my sweet tooth while sneaking in some protein.
