I’ve been trying to lose weight and be healthy and strong so I can set a good example for my daughter. But being healthy is tough when I make a lot of sourdough bread for my bread blog. I can only eat so many carbs before I start packing on pounds.
However, I did find a way to keep up with my sourdough starter and still make progress toward being healthy: Sourdough Discard Peanut Butter Pancakes.
Yes, they have carbs, but those carbs are full of fiber. And with the help of peanut butter powder, my pancakes are full of protein to help keep me full.

With some fresh fruit and fruit syrup, these sourdough discard peanut butter pancakes are a great weekend breakfast. Better still, I don’t have to share. I made the recipe small enough that I could enjoy them on my own without having to make a big batch for the entire family.
Allergic to peanuts? You can make sourdough discard pancakes for yourself and skip the PBFit powder. Although they won’t have as much protein, these mini pancakes are a fun and flavorful way to use up your discard.
