I’ve been trying to lose weight and be healthy and strong so I can set a good example for my daughter. But being healthy is tough when I make a lot of sourdough bread for my bread blog. I can only eat so many carbs before I start packing on pounds.

However, I did find a way to keep up with my sourdough starter and still make progress toward being healthy: Sourdough Discard Peanut Butter Pancakes.

Yes, they have carbs, but those carbs are full of fiber. And with the help of peanut butter powder, my pancakes are full of protein to help keep me full.

Enough for One

Just look at those cute little pancakes. Each one perfectly round thanks to my Dash mini pancake maker.*

With some fresh fruit and fruit syrup, these sourdough discard peanut butter pancakes are a great weekend breakfast. Better still, I don’t have to share. I made the recipe small enough that I could enjoy them on my own without having to make a big batch for the entire family.

Allergic to peanuts? You can make sourdough discard pancakes for yourself and skip the PBFit powder. Although they won’t have as much protein, these mini pancakes are a fun and flavorful way to use up your discard.

Ingredients

  • 113 Grams Sourdough Discard, Fed or Unfed (1/2 Cup)
  • 60 Grams Milk (1/4 Cup Milk)
  • 1 Gram Vanilla Extract (1/4 Teaspoon)
  • 14 Grams Butter, Melted (1 Tablespoon)
  • 1 Large Egg
  • 32 Grams PB Fit Peanut Butter Powder (4 Tablespoons)
  • 7 Grams Ground Flaxseed Powder (1 Tablespoon)
  • 4 Grams Baking Powder (1 Teaspoon)
  • 6 Grams White Granulated Sugar (1 1/2 Teaspoons)
  • .5 Grams Ground Cinnamon (1/4 Teaspoon)
  • .25 Grams Ground Nutmeg (1/8 Teaspoon)
  • 1.5 Grams Salt (1/4 Teaspoon)

Instructions

  • Preheat the Dash Mini Pancake Maker.
  • In a medium mixing bowl, combine the wet ingredients: Sourdough starter, milk, vanilla extract, butter, and egg.
  • In a small mixing bowl, combine the dry ingredients: PB Fit powder, ground flaxseed powder, baking powder, sugar, cinnamon, nutmeg, and salt.
  • Stir the dry ingredients into the wet ingredients and mix until well incorporated.
  • Lightly grease the pancake skillet, and pour 1/4 cup of the batter into the pancake maker. Cook for 2 1/2 minutes, flip, and then cook for another 2 1/2 minutes for a total of 5 minutes. Repeat with the rest of the batter.
  • Top with fresh fruit, fruit syrup, or peanut butter drizzle and enjoy.

Notes

Just as a heads up, I used the Dash mini pancake maker for this recipe, and it made 5 pancakes. If you make them in a regular skillet, this recipe only makes about 2 to 3 average-sized pancakes rather than 5 mini ones.
I feed my sourdough starter whole wheat flour to 100% hydration: equal parts water and flour (40 grams of each). I prefer using whole wheat so my pancakes have more fiber. However, this recipe should still work just fine if you use all-purpose.

Did You Try It?

I love trying new things and creating new recipes, but I love it even more when others enjoy my recipes. If you liked this sourdough discard peanut butter pancakes, please leave a star review. Or if you have suggestions, leave them in the comment section below.
