Method
- Preheat the Dash Mini Pancake Maker.
- In a medium mixing bowl, combine the wet ingredients: Sourdough starter, milk, vanilla extract, butter, and egg.
- In a small mixing bowl, combine the dry ingredients: PB Fit powder, ground flaxseed powder, baking powder, sugar, cinnamon, nutmeg, and salt.
- Stir the dry ingredients into the wet ingredients and mix until well incorporated.
- Lightly grease the pancake skillet, and pour 1/4 cup of the batter into the pancake maker. Cook for 2 1/2 minutes, flip, and then cook for another 2 1/2 minutes for a total of 5 minutes. Repeat with the rest of the batter.
- Top with fresh fruit, fruit syrup, or peanut butter drizzle and enjoy.
Notes
Just as a heads up, I used the Dash mini pancake maker for this recipe, and it made 5 pancakes. If you make them in a regular skillet, this recipe only makes about 2 to 3 average-sized pancakes rather than 5 mini ones.
I feed my sourdough starter whole wheat flour to 100% hydration: equal parts water and flour (40 grams of each). I prefer using whole wheat so my pancakes have more fiber. However, this recipe should still work just fine if you use all-purpose.
