Method
- Marinade pork overnight (or at least 2 hours) in the can of coke combined with 1/4 cup of the brown sugar.
- Pour pork and the marinade into the slow cooker and cook on low for 8 hours or on high for 4.
- Remove meat and shred. Discard the marinade.
- Return pork to the slow cooker and add enchilada sauce, garlic, diced green chilies, and the rest of the brown sugar (3/4 cup).
- Cook for another 30 to 60 minutes.
- Serve on a burrito with black beans, pinto beans, cilantro lime rice, cheese, lettuce, Pico de gallo, guacamole, or all your favorite burrito fixings.
Notes
Feel free to adjust your level of spice to your preference. In my house, we prefer milder green enchilada sauce. If you want to take the spice up a notch or two, make sure to choose a hotter red enchilada sauce.
