I’m not sure how many of you remember my old blog. But if you were there near the beginning, then you may have seen my recipe for Peanut Butter Oatmeal Squares.
If you’re a newcomer to my blog, then I’m so happy that I get to reintroduce an old favorite to you.
Peanut Butter Oatmeal Squares are ridiculously easy to make. Just stir things together, scoop them into a dish, and refrigerate. They’re a great source of protein and fiber, and they’re sweet enough to feel like a tasty dessert without destroying your diet.
When stored in a glass container with a lid*, these squares stay fresh in the fridge for almost a week. I like to make my squares over the weekend, and then I always have something tasty on hand for whenever my daughter needs an after-school treat.
Peanut Butter Oatmeal Squares have plenty of flavor on their own. But I love a little variety now and then. If you feel adventurous, mix in chocolate chips, chia seeds, coconut flakes, etc. Feel free to play around with it and see what flavor you like most!

I want to use chocolate chips in this recipe when do I put them in?
I would stir them in after the oats but before you shape/press them into the casserole dish. Just be aware that if the oats are a bit hot they might melt the chocolate chips a little (which isn't necessarily a bad thing). If you like, you could melt down the chocolate chips and drizzle them over the top of the peanut butter squares.
