Creamy Coconut Fudgesicles

I can’t believe summer is official here. The warm weather has been a delight, and it’s been so much fun having my daughter home from school. We’ve already kicked off our summer vacation with plenty of time outdoors, including frequent trips to our local recreation center and splash pad.

Of course, all this summer fun wouldn’t feel complete without an icy cold treat. As much as I love my simple yet straightforward vanilla chocolate chip popsicles, sometimes I need something a little richer, creamier, and more indulgent.

This week I’m going to blow you all away with my creamy coconut fudgesicles. These popsicles are creamy, sweet, and oh-so-smooth. My husband tells me they taste like chocolate Creamies, although my recipe has a fun coconut twist.

When I made this recipe, I wanted a popsicle that leaned more toward a milk chocolate flavor, since no one else in my family enjoys dark chocolate. However, if you prefer dark chocolate, feel free to add a little more cocoa powder. Upping the cocoa to 1/4 cup rather than 3 tablespoons should give you a richer, stronger chocolate flavor.

I also use these popsicle molds that I purchased from Amazon. My recipe fills these molds perfectly. If your molds are different sizes or shapes, you may need to adjust the proportions accordingly. Ingredients

  • 396 Grams Full-Fat Coconut Milk (14 Ounce Can)
  • 64 Grams Coconut Cream (1/4 Cup)
  • 21 Grams Cocoa Powder (3 Tablespoons)
  • 42 Grams Honey (2 Tablespoons)
  • 2 Grams Vanilla Extract (1/2 Teaspoon)
  • 0.7 Grams Sea Salt (1/8 Teaspoon)

Instructions

  • In a blender, combine coconut milk, cocoa powder, honey, vanilla, and sea salt until smooth.
  • Pour mixture into popsicle molds and freeze until solid.

Notes

Your freezer may be warmer or colder than mine. Make sure your popsicles are completely frozen before removing them from the molds.
