Almond Joy Smoothie (Banana Free)

I still have a long ways to go in my weight loss journey. However, I’ve learned that it’s important to get enough protein to support muscle growth and fiber for healthy digestion.

Although I’ve loved my chocolate peanut butter oat smoothie, sometimes I get tired of eating the same thing on repeat. I like to switch up my meals to ensure I get a variety of nutrients in my diet.

Recently I checked my pantry and noticed that I had some almonds and coconut that were going to expire soon, resulting in a lightbulb moment. I love Almond Joy Cookies, and I can’t get enough of Almond Joy Bread, why not make an almond joy smoothie?

Behold: this almond joy smoothie is a thing of beauty.

I used my chocolate peanut butter smoothie as a base and made a few tweaks to accommodate for the new ingredients. The calorie count seemed a bit high, so I scaled it back. I wanted a breakfast friendly smoothie not an entire meal in a cup.

But once I finished, I felt super happy with my recipe. It’s flavorful and filling. And better still? I didn’t have to use any bananas to create this smoothie. It’s thick and sweet without my least favorite fruit.

Although I wouldn’t say this smoothie tastes exactly like its namesake in drinkable form, I would say that this smoothie sparks joy in my mornings.

A banana free chocolate smoothie with a coconut twist. High in protein and fiber, it's a tasty breakfast or post-workout smoothie.

Ingredients
  

  • 15 Grams Chia Seeds (1 Tablespoon)
  • 13.3 Grams Shredded Sweetened Coconut (3 Tablespoons)
  • 23 Grams Almonds, Slivered (1/4 Cup)
  • 7 Grams Cocoa Powder (1 Tablespoon)
  • 1 Gram Coconut Extract (1/4 Teaspoon)
  • 3 Grams Vanilla Extract (3/4 Teaspoon)
  • 240 Grams Milk (1 Cup)
  • 21 Grams Honey (1 Tablespoon)
  • 180 Grams Ice (1 Cup – to taste)

Instructions
 

  • Add chia seeds, almonds, and shredded coconut and pulse into a fine powder.
  • Add cocoa powder, extracts, milk, honey, and ice. Blend until smooth.

Notes

Make sure to blend the tougher ingredients thoroughly, or your smoothie will have a grainy texture. 
Adjust the ice to your personal taste and preference. For a thicker smoothie (initially), add more ice.
