No bake cookies are my daughter’s personal favorite cookie. When asked to choose between chocolate chip, frosted sugar cookies, or no bake cookies, my girl will pick no bake cookies 9 times out of 10 (with the sugar cookies and chocolate chip cookies fighting for their time in the spotlight).
Some nights, I make a small-batch of cookies for my family, and we enjoy the treat instead of actually eating a healthy dinner. A small-batch divides evenly in our house, so no one has to bargain or bribe for the extra cookie.
But sometimes, I like being sneaky. Sometimes, I want cookies just for myself. On these days, I need an even smaller batch that I can easily hide the evidence of any baking done while my daughter is at school. Hence the creation of Dash Mini Rice Cooker No Bake Cookies.

One of the great things about no bake cookies is that you don’t have to preheat the oven. They’re a great choice for a summer dessert when you don’t want to heat your entire kitchen. And since you can make everything on the stove, you don’t have to worry about washing multiple mixing bowls and cookie sheets.
So my challenge this week was to take an already beloved cookie and make it even easier. And I’d like to think I succeeded.
These Mini Rice Cooker No Bake Cookies only heat the smallest space. Better still, the rice cooker bowl fits perfectly in the dishwasher for even less cleanup. The small batch means you can indulge in a single large cookie for yourself, or you can split it into three small cookies and share it with two other lucky people in your family. Everyone wins! (Unless you have four people in your family and you have to pick favorites).
Mini Rice Cooker No Bake Cookies
Ingredients
- 37.4 Grams White Granulated Sugar (3 Tablespoons)
- 15 Grams Milk (1 Tablespoon)
- 14 Grams Butter (1 Tablespoon)
- 3.5 Grams Cocoa Powder (1.5 Teaspoons)
- 30 Grams Peanut Butter (2 Tablespoons)
- 30 Grams Oats, Old-Fashioned (1/3 Cup)
Instructions
- In the bowl of the rice cooker, stir the sugar, milk, butter, and cocoa powder until well combined.
- Turn on the rice cooker. Bring the chocolate mixture to a boil for 30 seconds to 1 minute.
- Remove the bowl of the rice cooker from the heat. Stir in the peanut butter and the oats.
- Scoop three cookies onto a plate and chill in the fridge for 1 hour or until firm.
