Easy Black Beans and Yellow Rice for One

I use my DASH mini appliances on a regular basis, and I’ve shared a few of my favorite recipes with you already. However, I recently realized I’ve only used my mini rice cooker for a few soup recipes. Surprisingly, I haven’t posted anything that uses it for actual rice.

So, this week I’m going to share with you one of my favorite lunch recipes: black beans and yellow rice.

With the Dash mini rice cooker, I don’t have to make an entire batch of rice for my family. I can toss 1/2 cup of uncooked rice in the cooker, and let DASH do the rest. After 30 minutes, I have a tasty lunch that leaves me full for hours. No need to slave away in the kitchen or eat leftovers for an entire week.

Make This Recipe Your Own

I love how versatile black beans and yellow rice can be. On its own, this recipe offers plenty of protein and fiber. If I need to stretch it, I can use it as a burrito filling for Café Rio style pulled pork or I can grab a bag of tortilla chips and use this recipe as a dip. Additionally, I can mix it with beef for tacos, or I can serve it as a side with chicken.

Need to empty out your fridge? Black beans and yellow rice pairs well with a variety of garden veggies: tomatoes, onions, and bell peppers, to name a few. Similarly, baby spinach or lettuce can turn your rice mix into a zesty salad.

Want to turn up the heat? Sometimes Mexican food doesn’t feel authentic if it doesn’t melt your mouth. When you’re feeling fiery, toss in a bit of cayenne pepper or red pepper flakes to give this recipe some kick.

This high protein, high fiber meal not only makes for a yummy lunch on its own, but it also makes for a great burrito filling or side for Mexican cuisine.

Ingredients
  

  • 100 Grams Rice, Uncooked (1/2 Cup)
  • 2 Grams Chicken Bouillon (1/2 Teaspoon)
  • 1 Gram Ground Cumin (1/4 Teaspoon)
  • 1 Gram Turmeric (1/4 Teaspoon)
  • 1 Gram Paprika (1/4 Teaspoon)
  • 2 Grams Garlic Salt (1/2 Teaspoon)
  • 2 Grams Onion Powder (1/2 Teaspoon)
  • 82 Grams Corn (1/2 Cup)
  • 129 Grams Black Beans (3/4 Cup)
  • 4 Grams Lime Juice (1 Teaspoon)

Additional Toppings

  • Cilantro To Taste
  • Cheddar Cheese To Taste
  • Tomato, Chopped or Diced To Taste
  • Diced Green Onions To Taste
  • Bell Pepper, Chopped or Diced To Taste
  • Avocado, Chunked To Taste
  • Cooked Chicken, Beef, or Pork To Taste
  • Sour Cream To Taste

Instructions
 

  • In a Dash mini rice cooker, prepare 1/2 cup rice and stir in in chicken bouillon, ground cumin, turmeric, paprika, garlic salt, and onion powder. Set it to cook.
  • In a small container, mix together the black beans, corn, and lime juice.
  • Add the black bean mixture to the seasoned rice and mix until thoroughly combined.
  • Top with green onions, cheddar cheese, cilantro, avocado chunks, or serve with a side of chicken, beef, or pork.

Notes

Feel free to try different vegetables and seasonings to suit your tastes and preferences. Spinach or lettuce can turn this recipe into a salad. Or, melting cheese over the top could turn it into a dip for chips. If you want, add cayenne or red pepper flakes for a spicier side dish.
